“Taste of Nigeria” students’ competition

NIHOTOUR schools, catering schools or food producing company are working together on an industry-standard coveted competition to recognise hard work, dedication and innovation in hotel and catering in celebrating the Nigeria 50 th Independence Anniversary.

“Taste of Nigeria” celebrating greatness is a competition in which students create a meal intended to showcase Nigerian cooking at its best. The competition will be opened to teams of students who are attending full-time, part-time or sandwich courses at colleges.

This competition can be sponsored by a company or groups of companies in the industry. Entrants are invited to devise a 3-course sit-down, waiter/waitress-serves meal for 20. The project should hover around the theme ‘Taste of Nigeria’. A local or national theme may be developed, but the meal must make use of fresh produce and feature at least one product to reflect sponsorship from a company, for example: Maggie cubes etc.

The total cost of the food and drink must not exceed an agreed sum per head. The menu, accompanying drinks, details of the method of preparation and a schedule of the estimated costs are submitted to a panel of judges who select a finalist from each of four regions. Judges look for a menu which appeals to a cross-section of guests; is feasible in a commercial situation; makes interesting use of local produce and Maggie cubes and employs a range of cooking skills that make good use of the time available.

The six geo political finalists will then prepare their chosen menu for 20 at their college. A team of waiters/waitresses are provided to serve the meal to guests, which include the panel of judges. The same judges visit each of the six colleges to access the quality of the food and the suitability of the accompanying drinks. They also take into account the atmosphere created in the restaurant. The winning college receives a trophy which it holds for one year, and the winning team with its supervising lecturer are invited to Abuja for an award ceremony and luncheon at the Nicon Noga or Abuja Sheraton Hotel. They should be cash prizes for the regional finalists.
